Mango salsa tilapia. Very good carrot soup. Took carrots in chicken broth (though vegtable would have been fine too) with a potato. The potato was to add creaminess. After letting it boil for a bit, I used the immersion blender.
Tilapia was made in the microwave and the salsa was reduced then poured over it.
Very filling and delish.
