Plain and Curry/Indian Beef Jerky

These recipes were made with the help of ChatGPT and lots of iteration. I then packaged them in approx 1 oz small vacuum seal bags. I will store these in the freezer and let them thaw for snacks. It made about 12 oz from 32 oz beef but that does not account for what I ate in the process.

I let these marinate overnight which was probably more than needed for ground beef.

Plain

• 1 lb (454 g) 93% lean ground beef
• 1 tbsp ice water
• ¾ tsp Diamond Crystal kosher salt (or ½ tsp Morton kosher salt)
• 1 tsp coarse black pepper
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp smoked paprika (optional)
• ¼ tsp MSG (optional)

Curry / Indian

• 1 lb (454 g) 93% lean ground beef
• 1 tbsp ice water
• ¾ tsp Diamond Crystal kosher salt (or ½ tsp Morton kosher salt)
• 1/4 tsp MSG (optional)
• 2 tsp Kashmiri chili powder
• 1 tsp mild curry powder
• 1 tsp garlic powder
• ½ tsp onion powder
• ½ tsp ground cumin
• ½ tsp ground coriander
• ¼ tsp ground ginger
• ¼ tsp turmeric
• ½ tsp sugar
