Meredith (and Isaac) made Mexican Chicken Salad[@rev] (not sure where the recipe was from) and a zucchini and cheese "bread" thing.
I poached chicken breast in water heavily salted with table salt and Lawrys salt. I shredded it in the mixer.
The zucchini and cheese "bread" thing are thin slices of zucchini with crisped cheese to hold it together.
